Shipwrecked and stranded in an unknown land... MAP summer day camps at Camp Singing Wind are off to a great start! Campers plotted their voyage, charted their course (planning a stop at nearly every continent and visiting 12 different countries!) and built their ship - “the Voyager” only to have it wrecked by a wind storm! Today (July 3) they found themselves stranded in unknown territory. Thankfully there were natives (camp hosts!) to show them around. Campers learned about animal habitats and food foraging, played games and generally had a blast!
Lewis County Permaculture Society’s Chrys Ostrander shared:
At a time when finding practical solutions in how you can affect change in your school and community has never been more needed, this training helps unfold the opportunities that you DO have. Including so much more than assessing, designing and implementing school gardens and garden education programs, this course provides a set of tools and experiences that aim foremost to enliven education for you!
The course runs six full days...See More

Health Corner: Salt + Fat
Reprinted from 09.21.2017 Thursday Column & Health Corner by request
My personal experimentation with addressing sugar cravings - especially those late-night ones signaling I’m beyond tired - led me to an unusual solution: olives. High in healthy* oil, these salty snacks quell my sweet tooth without triggering an intense yearning for more shortly afterward.
So what’s the science behind using salt & fat to knock out these obsessive yearnings?
One: Fat satisfies the body’s hunger. Initially, carbs calm the ravenous appetite; however, the chain of events that follow carb intake sets up that familiar cycle that signals for more. Endurance athletes need carbs. They provide fuel on demand.
Author Jon Krakauer researched the role of fat in nutrition in his 1997 book Into The Wild. WWII concentration camp rations were deliberately lacking in fat (and protein, but that’s a topic for another day), the stuff your brain needs.
Various tales of the Lost Boys of the Sudan found overpopulated refugee camps sending these orphaned youth onward to the next camp with a small sack of beans - and oil, crucial to even the thinnest existence.
Fitness guru Jorge Cruise titled a chapter in his 2002 book 8 Minutes In The Morning: Eat Fat To Get Fit.
Two: Salt deficit is, surprisingly, behind some of today's major chronic diseases, including kidney dysfunction - diabetes. What? Isn’t sugar and refined carbs the culprit behind diabetes?
Last December, this Health Corner post cited Dr Peter Osborne of Glutenology (YouTube) on magnesium, scratching the surface of this specific mineral deficiency, correlating “high blood pressure, depression, osteopenia/osteoporosis, elevated cholesterol levels, and more.”
Dr. James DiNicolantonio refers in his book The Salt Fix to the myriad ways salt deficit is emerging as the link to compromised kidney function, one of many chronic diseases.
And both low levels of salt, and of magnesium, trigger those irresistible sweet tooth episodes. Listen to what that carb craving is trying to tell you.
As always, YMMV*
